Lomo saltado, causa, chaufa, chicha morada, and ajo amarillo are all dishes and ingredients we don’t see a whole lot on Calgary menus, despite the growing worldwide popularity of Peruvian cooking. South American cuisine, and Peruvian food in particular, is getting much fanfare these days. The top restaurant on last year’s World’s 50 Best Restaurants list was Central, a distinctively Peruvian restaurant in Lima and inventive Peruvian restaurants are popping up in cities all over Canada and the United States. Calgary is still catching up — we have a couple of good Peruvian restaurants in town, but we’ve long been lacking an inner-city take on modern Peruvian fare.
